- 2 Tbsp extra-virgin olive oil
- 2 chicken breasts filleted
- Ground black pepper
- Salt
- 2 oz onion, about 1 small onion 60 g
- 1 ½ cloves garlic
- 3 sprigs fresh thyme about 0.04 oz (1.2 g)
- ½ tsp crushed red pepper flakes or 1/4 tsp paprika
- ½ cup chicken stock 120 ml
- 1.4 oz sun-dried tomatoes 40 g
- 6 Tbsp cream 90 ml, preferably heavy cream or whipping cream, not cooking cream
- 0.7 oz Parmesan 20 g
- Fresh basil leaves for garnish
To make marry me chicken, finely chop the onion, crush the garlic, and cut the sun-dried tomatoes into smaller pieces. Grate the cheese. Season the whole chicken breasts with salt and pepper. Preheat the oven to 340°F convection (170°C fan)—but the recipe can also be made on the stovetop; see below.
In half of the oil, sear the whole chicken breasts first over very high heat, then over medium-high heat, for 3 minutes per side. Then set them aside on a plate.
Add the remaining oil to the skillet and add the onion. Cook over medium heat, stirring occasionally, for about 2 minutes. Add the garlic and cook for another half minute.
Add the sun-dried tomatoes, crushed red pepper flakes or paprika, the stock, and the cream. Tear in the thyme leaves. Stir everything together and add the chicken breasts.
Put the chicken in the oven and bake for about 20 minutes, until the inside reaches 167°F (75°C). Turn the chicken breasts twice while they cook. You can also make it on the stovetop, over low heat, covered, also for 20 minutes. In this case, turn the chicken breasts twice as well. Finally, add the grated cheese to the sauce and mix it in as much as you can. The chicken is already in the sauce, but the cheese will melt.
Tear fresh basil leaves over the top and serve immediately.
